Use a protected test environment with realistic sample data and test payment settings. Measure response times, errors and resource use while representative tasks run together. Include database writes and any external payment, delivery or booking service in your investigation.
A suitably sized managed or cloud plan may fit; a larger application may need a more customized environment. Neither the business category nor a high visitor estimate automatically requires a VPS or dedicated server. Identify the bottleneck and the maintenance requirements first.
